Madalas karinderya lang nakakainan ko nito at paminsan minsan sa sisig hooray, dito sa amin may sisig na inihaw na baboy. So hinanap ko at ginalugad ang mundo ng internet at eto ang aking nalikom. tsedeng!!!

Sisig is a Kapampangan term which means “to snack on something sour”. It usually refers to fruits, often unripe or half-ripe, sometimes dipped in salt and vinegar. It also refers to a method of preparing fish and meat, especially pork, which is marinated in a sour liquid such as lemon juice or vinegar, then seasoned with salt, pepper and other spices.

Sisig as is popularly known today is actually sizzling sisig, a Philippine dish made from parts of pig’s head, liver and usually seasoned with kalamansi and chili peppers.

The dish is said to have originated from locals who bought unused pig heads from the commissaries of nearby Clark Air Base in Angeles City, Pampanga. Pig heads were cheaply purchased since they were not used in preparing meals for the U.S. Air Force personnel stationed there. An alternate explanation of its origin is that it is but an innovation on an older recipe, which is pork ears and jowl, boiled, chopped then marinated.

Lucia “Lucing” Cunanan (1927 or 1928 – April 16, 2008) was a Filipino restaurateur credited in some quarters as having invented or re-invented sisig, a popular Filipino dish. The Philippine Department of Tourism has acknowledged that her Aling Lucing’s restaurant had established Angeles City as the “Sisig Capital of the Philippines” in 1974. Cunanan’s trademark sisig was started in the mid 1974 when she served a unique blend or concoction of boiled and chopped pig ears and cheeks seasoned with vinegar, calamansi juice, chopped onions and chicken liver and more likely served in sizzling plates. Today, varieties include sisig ala pizzailo, pork combination, green mussels or tahong, mixed seafood, ostrich sisig, spicy python, frog sisig and tokwa’t baboy, among others

Preparing sisig comes in three phases: boiling, broiling and finally frying. For example a pig’s head is first boiled to remove hairs and to tenderize it. Portions of it are then chopped and grilled or broiled. Finally, it is fried with onions and served on a sizzling plate. Variations of sisig may add any of the following: eggs, ox brains, chicharon (pork cracklings), pork or chicken liver, and even mayonnaise. Recently, local chefs have experimented with ingredients other than pork such as chicken, squid, tuna and even tofu.



1 1/2 kilo Pork head
1/4 cup grilled liver (diced)
2 small onions (minced)
2 pieces red pepper (minced)
1 head garlic (minced)
6 pieces hot chili pepper (minced)
2 tablespoons oil1 cup vinegar
1 1/2 tablespoons liquid seasoning
1 teaspoon black pepper
1 teaspoon brown sugar
1 cup beef stock

1. Boil pork head until tender.Then remove hair
2. Take out all the meat and dice.
3. In a sauté pan, heat oil and sauté garlic, onion, red pepper, pork meat and liver.
4. Season with liquid seasoning, black pepper, and brown sugar.
5. Pour in beef stock and cook until meat is tender and starts to oil again.
6. Put mayonnaise (depends na sa iyo yan), add minced chili pepper last.
7. Serve on a sizzling plate.

  1. hi.i had a bad experience with sisig hooray last june 30th. my friend and i were eating sisig there (robinson’s galleria) and we were so happy about how yummy it was.niyaya ko sha dun kasi nakakain ako dun once at natuwa ako sa chiken sisig.binida ko pa sa friend ko na mura dun pero okay talaga ung timpla.

    we decided to order some rice pa kasi bitin ung almost half cup na ata na rice nila. my friend ordered two extra rice but nobody attended to it (there were four people there and one of them was not doing anything). after some time, mga after 3minutes, my friend repeated her order. and one of the guys told her, “ma’am sandali lang, mabibigyan naman kayo eh.”
    when my friend got back to our table, mukang offended talaga sha kasi nafeel daw nya na pasimple daw na nangpahiya yung guy. so i said, don’t worry about it, let’s find na lang their contact details and send them some feedback about their crew.

    continue na lang kami sa pagkain, i gave her my last bite of chicken sisig kasi i wanted her to try it since she ordered pork.

    heto na.

    she discreetly spat/spitted out a piece of “meat” and placed it on the styro plate. she said, “um..karton ba to?”
    i couldnt tell at first kasi it was brown and a little flaky, so i decided to pick it up despite of her protests (it’s been in her mouth after all).

    i took pictures using my phone and when i showed it to my coworkers this morning, they were so disgusted kasi it really looks like a piece of cooked flaky meat.

    the busboy who was mopping the floor was intrigued with what we were doing so he was looking narin at the “meat”. i told him, “karton, manong. nakuha ko sa sisig.jan s sisig hooray. Grr.” mukang hindi pa sha maniniwala so i held it with my two hands and tore it. nanlaki ang mata nya nung nakita nya yung texture ng papel na pinupunit. pag-alis namin, he showed our plate to another busboy.

    sabi nung friend ko, pag sinabi daw namin dun sa store, baka awayin lang kami at sabihin na we’re just trying to get back at them dahil napahiya yung friend ko sa remark nung rude guy.

    pero ako ung nakakain nun noh, at malay ko ba kung nasa ibang sisig din nila yun. i can’t just let it go ng walang nasasabihan.
    when i got home, about 40minutes nang nakalipas, i drank three glasses of water and stuck my index finger down my throat.
    di na ko kakain dun T__T

Well lets just hope the management of sisig hooray will do something about it. Hoy Sisig Hooray management, please do something about this, para hindi na maulit at hindi mabawasan ang inyong mga suking katulad ko.

  3. my husband and i love eating at sisig hooray din. i too had a bad experience sa sisig hoorau, un sa sta lucia-east branch nila. i was almost done with my sisig when i saw a roach’s leg in my sisig… it’s just so disgusting, ipis un eh! imagine kung gaano kadumi un. nde ko lam if paa lng ba ung natadtad nila together with my sisig and shempre nde lang nman pang isang serving ung tinatadtad nila, so i dont know if ung sa akin lng ang contaminated or pati ung sa hubby ko and others who ordered that night. omg! nevertheless, i still eat sisig hooray sa ibang branch. i just hope they be more cautious with their food preparations kc health ng customers ung at stake and pati na rin ung name nila.

    • I don’t think they are open for franchise… parang family business lang eto. but theres no harm asking. why not ask them yourself malay mo you’ll make an offer they can’t refuse
